It's not always easy to eat your veggies. This easy salad is delicious, healthy and filling and can be made ahead of time and kept for a few days.
It's super salad!
1 bunch kale chopped
1 package shredded cabbage
1 shredded carrot
1 small package blueberries
1 C roasted cashews (or raw if you prefer)
1 C roasted sunflower seeds (or raw if you prefer)
2 C shelled edamame
1/2 red onion chopped
dressing:
1/4 C apple cider vinegar
1/2 C extra virgin olive oil
1 C acai juice (I also tried this with Odwalla blueberry juice which was tasty too)
2 cloves crushed garlic
salt
pepper
pinch of cayenne (optional, but awesome if you want a little extra flavor)
Throw it all in a big bowl and eat! It stays crunchy and delicious for days so it's perfect to make ahead for the week. You can switch up the ingredients based on what you have around too. Substituting slivered almonds, dried cranberries, raisins and raspberries are some variations we've liked. Enjoy!
